About US
Suelo Sur began with a tree and a decision to build around it. Everything since — the five spaces, the way the team works, the hours we keep — follows from that one choice.
EL ARROYO
Framed by the Sierra de la Laguna, Suelo Sur sits in the arroyo along the San José delta — three and a half hectares of kitchen, bar, garden and event ground on a bed the river built.
An arroyo runs when the mountains send water down and rests dry the months between. Each season it carried silt out of the sierra and laid it here. That sediment is why this valley grows what it grows, and why the kitchen draws from farms on either side of us.
The guamúchil found this ground two hundred years ago for the same reason the farms did. It has outlasted every season of the river, and it still holds the deepest shade on the property.
